Why you are hungry on every diet you have tried

People do not stop dieting because they stop wanting to be thinner. They stop because they are hungry, every day, for weeks, and eventually the hunger wins. It always wins. So the useful question is not how to resist it — it is how to eat less without being hungry in the first place.

Calories are not the thing you feel

Fullness comes mostly from volume, protein and fibre. Calories come mostly from fat and refined carbohydrate. Those two lists barely overlap, which is why it is entirely possible to eat 700 calories and still be hungry, and equally possible to eat 400 and not be.

A hundred grams of cabbage is 25 calories. A hundred grams of olive oil is 884. Your stomach can tell the difference in size; it cannot tell the difference in calories at all.

The three levers

Volume

Cabbage, courgette, cauliflower, peppers, lettuce, watermelon — all between roughly 15 and 40 calories per 100 g. You can put 400 g of them on a plate for less than the cost of one biscuit. Nothing else you can do to a meal changes how it feels this much.

Protein

It is the macronutrient that most reliably reduces how much you eat later. A meal built around 35 g of protein does work for the rest of the afternoon that a meal built around bread does not.

Fat, weighed rather than banned

Fat is 9 calories per gram against 4 for protein and carbohydrate, so it is where calories hide without taking up space. That is why the oil gets weighed and the dressings get built on yoghurt — strained yoghurt is about 59 calories per 100 g against roughly 680 for mayonnaise.

The number that actually matters

One kilogram of body fat is about 7,700 calories. A 500-calorie daily gap is therefore about half a kilo a week, and that is the honest rate.

Week one usually shows more, because most of it is water. Week three shows about 0.6 kg, and that is the real number. People quit in week three because they compare it to week one.

Weigh yourself once a week, same day, same time, before eating. Daily weighing measures salt and sleep, not fat.
